Açaí Bowl recipe

Hailed as a superfood, the Açai berry is a delicious tropical fruit from the Amazon Rainforest. The purplish-blue berries contain high levels of Essential Fatty Acids and are rich in antioxidants and high in minerals and vitamins such as calcium, phosphorous, beta carotene and Vitamin E.

A serving of açaí looks a lot like purple ice cream and certainly has that consistency. It’s basically a thick smoothie with yummy toppings. It’s delicious, healthy and filling – the perfect way to start your day. There are a number of trendy cafés around Tauranga that offer this dish but it’s just as easy to whip up your own.

Here’s our easy recipe for you to enjoy:

Ingredients:

  • 1 serve frozen Açai puree *
  • 1 frozen banana, peeled
  • Small handful of berries
  • Small amount of non-dairy milk. We use Almond Milk.
  • Toppings such as muesli, granola, coconut shavings, slivers of almond, slices of banana and other fresh fruit, berries, cacao nibs, etc.

Method:

  • Break the frozen Açai puree into several smaller pieces, chop the banana and add the berries to a blender. Blend until you have a smooth consistency. Add a small amount of milk until it has a ‘scoopable’ thickness.
  • Spoon the mixture into a bowl and arrange toppings. Use a variety so that you get explosions of flavour and different textures as you eat.

* You’ll find this in the freezer section at most large supermarkets and health stores. There are usually four single serves in each pack. Alternatively, if you use the Açai powder you’ll need to add more frozen fruit and milk.
