Christmas Eggnog recipe

Got 2 minutes? We’ve got eggnog. And without the raw egg! This gorgeous beverage is the perfect drink for Christmas, whether you’re by a roaring fire (have it steaming), or by the beach (have it on ice). Dairy-free and with no added sugars.

Wherever possible we want to reduce the amount of free/added sugars in our diet, as they’re easily absorbed into the blood stream and can lead to spikes in blood sugars. Therefore using whole foods such as dates is a much healthier alternative. If you really want to amp things up, you could add a dash of rum to this recipe too (although my health goggles will be looking the other way!).

Ingredients:

  • 1 cup plant-based milk
  • 1 Tbsp almond butter 
  • 2 dried dates
  • ¼ nutmeg 
  • ¼ cinnamon 
  • ¼ vanilla extract 
  • pinch of black volcanic salt 

Method:

  1. Blend all ingredients in a blender until super smooth. 
  2. To serve hot: heat on the stove until warm 
  3. To serve cold: pour over ice (or add a few ice cubes to the blender) 
  4. Sprinkle with cinnamon and nutmeg. Enjoy!

Buffy’s tips:

  • To sweeten, instead of the dried dates, use one Medjool date or 1 tsp liquid sweetener (brown rice malt or coconut nectar or yacon syrup) or 1 tsp of coconut sugar, or a pinch of stevia. 
  • If you have no volcanic salt, use regular (although the volcanic salt gives the drink an eggy flavour) 
  • You can add ½ tsp maca powder for a hormone balancing boost 
  • You can make a chocolatey version with 2 tsp cacao too! 
  • Freeze to make ice blocks for the kids!
