Courgette & Corn Fritters

Cherie Metcalfe’s friend George from Elizabeth Cafe has the best cooking style. There’s always loads of flavour, plenty of herbs, and a good glass of wine to go alongside. These delicious fritters are perfect for breakfast, lunch, or dinner, and the G-Banger takes them to the next level.

Recipe by George Gibson

Serves 4

Ingredients:

2 medium courgettes
1 teaspoon Man Grind Flakes
1 cup frozen corn, thawed
2 tablespoons cornflour
1 egg, beaten
2 tablespoons G-Banger
3 tablespoons plain flour, plus extra if needed
½ small onion, finely chopped
½ fresh chilli, finely chopped
1 handful fresh herbs, chopped (parsley, coriander, chives, or a mix)
1 teaspoon baking powder
Freshly cracked black pepper
Extra virgin olive oil, for frying

Herby Yoghurt Sauce

2 tablespoons sour cream
2 tablespoons Greek yoghurt
1 handful fresh herbs, chopped
½ lemon, juiced
Man Grind Flakes, to season

To serve

Pickled onion

Instructions:

Grate the courgettes, sprinkle with Man Grind Flakes, and leave in a sieve for
10 minutes to drain excess liquid. Pat lightly with a paper towel.

In a large bowl, combine the courgettes, corn, cornflour, egg, G-Banger, flour, onion, chilli, herbs, baking powder, and black pepper. Mix until well combined. The mixture should hold together. Add a little extra flour if it feels too wet.

Heat a generous splash of olive oil in a large frying pan over medium-high heat.

Spoon the fritter mixture into the pan, about 2–3 tablespoons per fritter.

Press lightly to flatten. Cook for 3–4 minutes until golden and crusty on the bottom, then flip and cook for another 2–3 minutes until cooked through.

Work in batches if needed.

To make the Herby Yoghurt Sauce, mix the sour cream, Greek yoghurt, herbs, lemon juice, and a pinch of Man Grind Flakes in a small bowl.

Serve the fritters hot with a dollop of herby yoghurt and a scatter of pickled onions over the top.
