Raw strawberry mousse with cashew frosting

Raw food isn’t just about eating salads, it means eating uncooked foods and involves mainly unprocessed, whole, plant-based, and preferably organic, foods that have not been heated above  46°C. You’ll love this raw strawberry mousse from the bite!

Mousse

  • 1 cup almond
  • 3 Tbsp chia seeds
  • ¼ cup strawberries pureed
  • ¼ tsp vanilla
  • 1 small avocado
  • 4 Tbsp maple syrup

In a bowl mix almond milk, strawberries and chia seeds. Place this in the refrigerator for a couple of hours but preferably overnight so that the seeds can form a gel.

Place this mixture in a blender with the rest of the ingredients and process until creamy.

Pour into 2 glasses and store in refrigerator while preparing the frosting.

Frosting

  • ½ cup cashews (soaked overnight)
  • 2 Tbsp coconut oil
  • 2 Tbsp maple syrup
  • ½ tsp vanilla
  • Pinch salt

Drain and rinse cashews. Place all ingredients in a food processor and blend until creamy. Pour on top of the mousse and garnish with fresh strawberries.
