Bounty Oats with Dark Chocolate

When winter mornings bring a definite chill, there’s nothing quite like starting the day with a warm, comforting bowl of oats. These Bounty Oats with Dark Chocolate are deliciously creamy, with a hint of coconut and a little touch of indulgence from the dark chocolate. Finished with fresh raspberries, they’re a cosy breakfast that feels like a treat while still being wonderfully simple to make.

Serves 3

Ingredients:

1 cup oats
2 Tbsp desiccated coconut
200ml coconut milk
2 Tbsp coconut sugar or honey
50g dark chocolate, chopped
Handful raspberries

Method:

Place the oats in a saucepan and add 1½ glasses of water and the desiccated coconut. Bring to boil then reduce the heat, and cook covered for about 10 minutes. In the meantime, stir 2-3 times.

Remove the lid, add coconut milk and sugar. Mix and remove from the heat.

Divide between bowls, sprinkle with chopped chocolate and top raspberries to serve.
