First Light Venison Medallion with Lewis Road Creamery Butter
New Zealand is the home of farm-raised venison but for some, cooking venison for the first time can be a bit overwhelming. This is where First Light, New Zealand’s premium meat producer comes in. They have provided a fail-safe cooking experience by supplying optimal cuts that are easy to cook and come with a stick of herb-infused butter to add before serving.
Mark: “The medallion was delicious and I wouldn’t have guessed that it was venison. Very tender and juicy. The melted garlic and herb butter over the top was a great bonus.”
First Light recommends taking the venison out of the fridge and allowing it to come to room temperature before cooking. Coat the venison, not the pan, with olive oil and season before adding it to a very hot pan. Sear all sides and add the butter right at the end.
“Venison is full of many micronutrients that we are deficient in… and is richer in protein than other meats, and contains good amounts of zinc – for immunity – and B vitamins, a source of energy,” says First Light CEO Jason Ross. “And because it is farmed, it doesn’t have the strong, gamey taste often associated with wild venison.”
