An amazing dessert that also makes a great breakfast!
INGREDIENTS:
• 2 large green or red apples, pureed
• 1 cup oats
• 1⁄2 cup walnuts, roughly chopped
• 1⁄4 cup cooked kumara, pureed
• 1⁄4 cup almond butter
• 2 Tbsp rice malt syrup, maple syrup or honey
• 2 Tbsp shredded coconut
• 2 Tbsp chia seeds
• 2 tsp ground cinnamon
• 1 tsp vanilla extract
• 1 tsp baking powder
• 1⁄4 tsp sea salt
TOPPING INGREDIENTS:
- 1 Tbsp oats
- 1 tsp rice malt syrup, maple syrupor honey
- 2 Tbsp roughly chopped walnuts
- 1 tsp coconut oil, softened
- Pinch of cinnamon
METHOD:
1. Preheat oven to 180°C and line a 12-hole muffin tin with baking powder.
2. Add all muffin ingredients into a food processor and blend until you form a smooth mixture.
3. Divide mixture amongst the muffin holes.
4. To make the topping, add the topping ingredients into a small bowl. Using your fingers, combine the mixture until crumbly. Sprinkle evenly on top of the muffin mixture.
5. Bake for 15 minutes or until a knife comes out clean. Once cooked, allow to cool slightly before eating.
TIP
If freezing, wait until cool then wrap well. Will last up to 2 months frozen.
